Watermelon Gazpacho


This cold gazpacho soup is just AMAZING!! It is so refreshing and has such a fruity taste to it!
You can make this very fast and don't need many cooking skills!


INGREDIENTS (3 servings):

2-3 cups watermelon
1-2 cups cherry tomatoes
2 Tbsp red onion chopped
1 Tbsp apple cider vinegar
1 Tbsp olive oil
juice of 1 lime
salt and pepper
some feta cheese to sprinkle on top


1. Cut and "deseed" the watermelon
2. Cut the tomatoes in half
3. Add both and all the other ingredients to your blender and blend
4. Put in the freezer for 20 min to cool down or put in an ice cube if you can't wait like me
5. Crumble the feta cheese on top

That is literally it!!
So easy and so delicious!

Spring Lookbook

Ripped jeans + bright blouse


I just love this look! It is so casual but still looks put together and it can easily be turned into a more "grown-up" outfit by changing the Converse to some plain black high heels/pumps.

This playsuit is just the perfect thing to wear on a hot spring day! 
It is so comfortable and easy to throw on but still looks very pretty!
I paired it with some black sandals but you can obviously wear this with any kind of shoes !

Colorful Culottes + black Halterneck


 I have to feel very confident on the days I wear this outfit! I love it a lot but it is something... something different!
When I saw these culottes (the pants) I instantly fell in love with them!
I also really like the shoes (but I don't wear them a lot as they are very high...) because they give the outfit more of a "beach-party" feeling.

Embroidered Shorts + flowy Top


I love the shorts with the embroidered roses. I think the flowers give it a special touch!
The white flowy top goes perfectly with the shorts and is also very lightweight (good for hot days).
I'm loving this kind of shirts at the moment... and may have bought a little too many of them!

Healthy Cantuccini



Hello there,
today I thought I'd show you the recipe for a healthy version of the Italian biscuits "Cantuccini".
I love them so much, that I already made them 6 times in the last few weeks! 
They are filled with fibers and healthy fats, so they are not only a "no-regrets" treat but healthy and good for you.
These are cookies you can serve with tea and coffee or just snack on.




Ingredients: 1 cup wholemeal flour
                       1 1/3 cup ground almonds
                       1/4 cup brown sugar
                       1/4 cup honey/maple or agave syrup (what you prefer)
                       2 eggs
                       2 tbsp almond butter
                       1/2 tsp cinnamon
                       1 tsp vanilla extract
                       pinch salt
                       1/2 cup almonds (you can use more if you want)

Instructions: 1. In a big bowl mix all the ingredients (apart from                                      

                             the whole almonds) together.
                             It may seem a bit dry at first but just keep mixing   
                             and it should get a doughy consistency.                                           
              
                        2. Add the almonds by folding them in with your hands.    
                             Don't use them all at once, step by step add about     
                             otherwise they won't spread in the dough.
              
                         3. Make three about 3cm (1 inch) thick dough rolls and                     
                             place them on a backing tray.
              
                         4. Bake them for 10 min at 180 degree Celsius (350 F) in the ov                                                                       
              
                         5. Take them out of the oven and let them cool for a little bit.
                             Cut the rolls slightly diagonal in 1-2cm thick slices to get the Cantuccini 
                             shabe.  (It is kind of challenging to cut the rolls without them falling apart.
                             You can shape the biscuit by pressing it together with your fingers...                        
                             but they don't have to be perfect)
                 


                           6. Place the baking tray again in the oven at the same for about 15-20 min                                   
                                 until they turn gold-brown.
                       
                            7. Let them cool down and enjoy!!
