Gingerbread Cookies - healthy and vegan


Today I wanted to share the recipe for these delicious gingerbread cookies with you guys.The great thing about these is that they are not only a healthy version of the original   cookies, but also are they vegan.I love to have these gingerbread cookies with a good cup of tea when I come home from school.



               INGREDIENTS

                 dry: 1 1/2 cups wholemeal flour                               wet: 1/3 cup coconut oil
                           1        cup ground almonds/almond flour                 1/4 cup almond milk
                           1/3    cup coconut sugar                                               1/4 cup blackstrap molasses
                           1        tsp baking powder
                           2       tsp cinnamon
                           1        tsp ground ginger
                           1        tsp nutmeg
                           1/4    tsp ground clove 
                           1        pinch of salt



Before you start preheat your oven to 180 degrees celsius or 350 Fahrenheit

1. Combine all the dry ingredients in bigger bowl

2. Melt the coconut oil in the microwave or in a saucepan 

3. Mix the almond milk and molasses in a second bowl then add the oil an combine

4. Pour the wet mixture into the dry one and mix until a dough is formed





5. Roll out your dough to about half a centimeter thick on a floured surface and cut out your desired shape of cookies

Make sure that your shapes are all about the same size otherwise you'll have to take the smaller cookies out of the oven earlier than the bigger ones (like I had to do with the little stars).    



6. Bake for 11 to 14 minutes or until lightly browned, depending on the size of your cookies

Healthy iced green tea latte


Summer is finally here and that means: ICED DRINKS!!

Especially this iced matcha latte is perfect to cool me down on a hot summer day.
Matcha does not only taste amazing but is also very healthy. It is full of  antioxidants and all sorts of vitamins.
You can get it in a lot of stores that sell tea or if you can't find it there: on amazon there are many sellers.

Iced green tea latte
Ingredients
  • 1 1/2 cup dairy free milk
  • 2 tsp matcha powder
  • 1 tbsp maple syrup
  • 1/2 cup water
Instructions
1. Add the water and the matcha powder into a blender and blend it until there are no more lumbs of powder anymore.2. Then add the rest of the ingredients (milk and syrup) and blend again. I prefer using coconut or almond milk3. Poor the mixture in a glass filled with ice cubes and there you have it!

Rainy days - Lookbook

Hey there! So I'm back with another Lookbook!
